Chocolate Chip Coconut Cookies

Quick, delicious, low carb coconut chocolate chip cookies that kids won't complain about!

Ingredients

1 1/4 cups almond flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup shredded coconut

1 egg

1/2 cup SF chocolate chips (Lily's are an awesome choice)

4 tablespoons butter

1 1/2 tablespoons coconut oil

1 teaspoon liquid stevia (or any other sweetener you are partial to)

1/2 tablespoon vanilla

Directions

1Preheat the oven to 350 degrees, line a baking sheet with parchment paper or grease with butter

2In a large bowl, combine baking powder, salt, shredded coconut, butter, stevia, and coconut oil with a hand mixer. Mix until smooth.

3Stir in vanilla and egg until evenly combined

4With a wooden spoon, mix in almond flour 1/4 cup at a time, making sure it is evenly distributed throughout the batter as you are mixing and adding in each additional 1/4 cup

5Once all flour is added, beat on medium with a hand mixer for one minute

6Stir in chocolate chips

7Scoop out one tablespoon of the dough and roll into a ball, place balls evenly across cookie sheet

8Lightly flatten them at the top to be about a 1/2" tall

9Sprinkle shredded coconut evenly across the tops of cookies

10Bake for 9-12 minutes or until edges begin to turn golden brown

11Allow to cool and enjoy!
