Chorizo Taco Eggs

Taco Eggs! Chorizo, cheese, and eggs. Add some 0 carb hot sauce for a real kick!

Ingredients

5 eggs

2 tablespoons heavy whipping cream or half and half

1/2 cup Shredded Monterey Jack Cheese

2 teaspoons red chili powder

1 teaspoon cayenne

1 teaspoon black pepper

4 oz. Mexican Style Chorizo Sausage

Directions

1In a medium bowl, whisk eggs with whipping cream

2Once eggs are sufficiently whisked (all yolks are broken up and the mixture is an even yellow) add in half of the shredded cheese into the mixture along with spices (red chili powder, cayenne, and black pepper) and whisk until they are evenly distributed

3If chorizo is in a casing, remove 4 ounces from casing and place into a skillet

4Turn burner on medium heat and cook chorizo for 5 minutes, until it is bubbling and just beginning to brown

5Remove chorizo from the skillet and place on to a plate, leaving some of the fat to cook the eggs in

6Pour egg mixture into the skillet and begin to scramble eggs for two minutes before adding chorizo

7Once chorizo is added, add the rest of the shredded cheese and continue to scramble until eggs are fully cooked to your liking

8Optional: Sprinkle a little cheese on top 😉
