Lemon Vanilla Muffins

Quick low-carb Vanilla Lemon Chocolate Chip muffins! Delicious for breakfast or as a mid-afternoon snack.

Ingredients

2 Eggs

6 Tablespoons Butter

1 Teaspoon Stevia

1 1/2 Cup Almond Flour

1/2 Teaspoon Baking Powder

1/2 Lemon

1 Tablespoon Vanilla

12 SF chocolate chips

Directions

1Preheat the oven to 375 degrees

2Add eggs, 4 tablespoons softened butter, and stevia into a large bowl

3Beat for 2 minutes until combined and smooth

4In a separate bowl, add almond flour and baking powder and mix with a wooden spoon

5Slowly fold in dry mixture while beating

6Squeeze or juice half a lemon in a small bowl (remove any pulp or seeds) and pour into batter

7Add vanilla and beat until smooth (for a more chocolately chip muffin, fold in SF chocolate chips to your heart's desire in this stage)

8Pour into small ramekins and top with 5-6 SF chocolate chips

9Bake for 17 minutes or until top has risen and is a light golden brown

10Remove from oven and top with remaining 2 tablespoons of butter evenly
