Low carb nut free energy bars

Delicious nut free energy bars. Have one for a snack or two for a meal replacement!!

  • Yields: 12 bars


1 1/2 cups flax seeds

1/2 cup chia seeds

4 cups water

1/4 cup unsweetened shredded coconut

2 tablespoons vanilla

1 1/2 teaspoons liquid stevia

3 tsp 100% dark chocolate cocoa nibs


1Preheat the oven to 375 degrees

2Pour flax seeds into a large mixing bowl, and chia seeds into a separate smaller bowl

3In a medium saucepan, bring water to a boil

4Pour three cups boiling water into the flax seeds and one cup of boiling water into the chia seeds

5After 1 minute pour chia mixture into flax mixture (note: if chia turns into a ball before mixing it into flax pour a little water in to break it up so it mixes in evenly with the flax seeds)

6Mix in vanilla and liquid stevia With the chia and flax seeds

7Mix throughly with a large wooden spoon every few minutes until most of the water is absorbed

8Grease two glass baking pans and spread the mixture out evenly across the top

9Sprinkle cocoa nibs and shredded coconut on the top

10Bake for an hour, or until the sides of the bar shrink away from the pan 1/4" to 1/2"

11Slice and enjoy!
