Quick and delicious fat bombs without any coconut. They taste like peppermint ice cream, and have .9g net carbs per serving!
1/2 cup heavy whipping cream
4 oz cream cheese
3 teaspoons vanilla
2 teaspoons peppermint extract
10 drops stevia liquid extract
Place heavy whipping cream and cream cheese into a bowl
Beat with a hand mixer on medium for 2-3 minutes, you are looking for the cream cheese to break down and a smooth whipped cream like mixture
Add in vanilla, peppermint extract, and stevia to the mixture and beat for an additional 1 minute
Take out an ice tray or a small baking pan and spread mixture evenly
Place into the freezer for 1-2 hours or until firm
Enjoy 1-2 pieces at a time-- they can be addictive!
