15 min Sloppy Joes on Cloud Buns

 Sloppy Joes:
 
 1 pound grass fed ground beef
 2 TBS onion, chopped
 1 stalk celery, chopped
 1 clove garlic, minced
 1/4 cup tomato paste (Bionature) in a glass jar
 3/4 cup water (or quality beef broth: for “umami” favor!)
 2 TBS Swerve Confectioners (or 1 drop stevia glycerite)
 1 1/2 tsp coconut vinegar
 1/2 tsp mustard
 1/2 tsp Celtic sea salt
 1/8 tsp pepper
 Dash of Mesquite Spice
 Dash of Ground Chili Peppers
 
 Cloud Buns:
 1 pound grass fed ground beef
 2 TBS onion, chopped
 1 stalk celery, chopped
 1 clove garlic, minced
 1/4 cup tomato paste
 3/4 cup water (or quality beef broth: for “umami” favor!)
 2 TBS Swerve Confectioners
 1 1/2 tsp coconut vinegar
 1/2 tsp mustard
 1/2 tsp Celtic sea salt
 1/8 tsp pepper

Start by making cloud buns:

Preheat oven to 300°F. Line baking pan with parchment paper or silicone liner.

Separate the eggs into separate bowl.

Add the cream cheese and salt to the yolks. Blend well with an electric mixer.

Sprinkle cream of tartar on the egg whites if desired. Whip with a clean electric mixer until very stiff. (5 mins approx)

Using a spatula, gradually fold the egg yolk mixture into the white mixture. Try not to break down the egg white, you want it to stay fluffy.

Spoon 6 mounds of the mixture onto the the prepared baking pan. Flatten each mound slightly.

Bake for about 25-30 minutes. Do not over bake or they can become crumbly.

Cool on the baking pan for 3-5 minutes, then transfer to a cooling rack.

To keep soft, store them in a big zipper bag. Storing in the refrigerator or freezer keeps them fresh longer.

In a large pan, brown the beef, onion, celery and garlic; drain fat. Stir in all remaining ingredients. Simmer for 15 minutes on low for the flavors to open up. Serve on my Keto Bread for Pure Protein and Fat meal.

*Note the cloud bun recipe makes 6 (good for 3 sloppy joes) but I divided the meat part into 4. Nutrition given is for 1/4 of the meat and 2 cloud buns.
