Baked Pulled Pork and fresh Avocado, with hen eggs and sour cream

Ultra quick, easy and elevated pulled pork #keto dish. Loaded with healthy fats and tons of protein.

Proteins
 1 pound of low carb pre-packaged Pulled Pork (I'll submit a recipe for homemade pulled pork soon)
 2 farm fresh hen eggs
 1/2 pound of Jack Cheese
Others
 1 Organic Avocado
 3 Tablespoons of Sour Cream
 2 Tablespoons of Butter
 2 Tablespoons of freshly chopped Garlic
Seasonings
 2 Tablespoons of Black Pepper
 1 Tablespoons of Smoked Paprika
 1 Tablespoon of Onion Powder
 1 Teaspoon of Coriander

This recipe is pretty straight forward and absurdly delicious for how easy it is to prepare.

You're free to select whatever packaged pulled pork you can find for this recipe, just make sure it's near zero carb / no added sugar. I didn't reccomend one as this selection will be subject to regions and store access, some of you might also want to make your own pulled pork (not very hard to do)

Start with a ceramic or glass baking pan, coat the inside of the pan with butter

Then we want to piece by piece spread our pulled pork out in our baking pan

Now we need to season our pulled pork with our paprika, pepper, coriander, onion powder and fresh garlic.

Next we need to throw our pulled pork in the oven at 400 for 15 minutes

Take your pulled pork out of the oven and quickly sprinkle grated jack cheese generously over the top

Crack two fresh eggs over the top of the pulled pork and cheese

9

hit the entire dish with another round of pepper to taste

Put the pan back into the oven at 400 for another 15 minutes

No mess, no fuss, no time. I love this recipe

So we managed to only use one baking pan and this took around 40 minutes with very little prep, i can this a homerun.

I personally like to add a bit of cilantro and lime at the end to amp of the freshness and if i have the time i'll either make homemade carnitas for this or homemade pulled pork.
