Quick, delicious, low carb coconut chocolate chip cookies that kids won't complain about!
Preheat the oven to 350 degrees, line a baking sheet with parchment paper or grease with butter
In a large bowl, combine baking powder, salt, shredded coconut, butter, stevia, and coconut oil with a hand mixer. Mix until smooth.
Stir in vanilla and egg until evenly combined
With a wooden spoon, mix in almond flour 1/4 cup at a time, making sure it is evenly distributed throughout the batter as you are mixing and adding in each additional 1/4 cup
Once all flour is added, beat on medium with a hand mixer for one minute
Stir in chocolate chips
Scoop out one tablespoon of the dough and roll into a ball, place balls evenly across cookie sheet
Lightly flatten them at the top to be about a 1/2" tall
Sprinkle shredded coconut evenly across the tops of cookies
Bake for 9-12 minutes or until edges begin to turn golden brown
Allow to cool and enjoy!
