Taco Eggs! Chorizo, cheese, and eggs. Add some 0 carb hot sauce for a real kick!
In a medium bowl, whisk eggs with whipping cream
Once eggs are sufficiently whisked (all yolks are broken up and the mixture is an even yellow) add in half of the shredded cheese into the mixture along with spices (red chili powder, cayenne, and black pepper) and whisk until they are evenly distributed
If chorizo is in a casing, remove 4 ounces from casing and place into a skillet
Turn burner on medium heat and cook chorizo for 5 minutes, until it is bubbling and just beginning to brown
Remove chorizo from the skillet and place on to a plate, leaving some of the fat to cook the eggs in
Pour egg mixture into the skillet and begin to scramble eggs for two minutes before adding chorizo
Once chorizo is added, add the rest of the shredded cheese and continue to scramble until eggs are fully cooked to your liking
Optional: Sprinkle a little cheese on top ;)
