Dry Rub Ribs with Cauliflower and Broccoli

A delicious dry rub on baby back pork ribs, with some wonderful vegetables to accompany them.

Ribs
 1 rack of baby back pork ribs
 1 tablespoon fresh ginger
 2 tablespoons freshly minced garlic
 2 tablespoons freshly ground black pepper
 2 teaspoons smoked paprika
 1 teaspoon himalayan sea salt
 1 teaspoon cayenne pepper
 1 teaspoon ground cumin
 2 teaspoons white pepper
 1 piece of bacon
 2 tablespoons butter
Vegetables
 1 head of broccoli
 1 head of yellow cauliflower
 1 head of white cauliflower
 1 tablespoon shallots
 3 pieces of bacon
 2 teaspoons minced garlic
 2 teaspoons black pepper
 1 teaspoon onion powder
 1 tablespoon dried rosemary sprigs
 1 tablespoon of butter
 2 teaspoons olive oil

Ribs

Take the ribs out and allow them to sit at room temperature at least 30 minutes before prep

Preheat the oven to 400 degrees

On each side of the ribs, dry rub with all spices

Rub both sides with garlic and ginger

On a baking pan, place the ribs bone down (meat up) and lay a slice of bacon across the top

On the bacon, place 1 tablespoon of butter

Place ribs in the oven for 20 minutes

Take the ribs out, flip them over to be bone up (meat down) and place the bacon across the top. Place another tablespoon of butter on the bacon

Place ribs back in the oven for 20 minutes

Allow them to rest for 10 minutes before consuming

Preheat the oven to 400 degrees (you can bake these simultaneously with the ribs)

Break down the heads of cauliflower and broccoli to your liking, remove leaves and cut off some of the stems

Wash them after they are broken down into the size you prefer

Place them into a glass baking pan

Drizzle olive oil across the top

Season evenly with all seasonings and hand toss

Slice bacon into small chunks, and place evenly across the top of the vegetables

Place 2 tablespoons of butter evenly separated on top of the bacon

Bake for 40 minutes and serve
