Preheat the oven to 375 degrees
Add eggs, 4 tablespoons softened butter, and stevia into a large bowl
Beat for 2 minutes until combined and smooth
In a separate bowl, add almond flour and baking powder and mix with a wooden spoon
Slowly fold in dry mixture while beating
Squeeze or juice half a lemon in a small bowl (remove any pulp or seeds) and pour into batter
Add vanilla and beat until smooth (for a more chocolately chip muffin, fold in SF chocolate chips to your heart's desire in this stage)
Pour into small ramekins and top with 5-6 SF chocolate chips
Bake for 17 minutes or until top has risen and is a light golden brown
Remove from oven and top with remaining 2 tablespoons of butter evenly
