Delicious nut free energy bars. Have one for a snack or two for a meal replacement!!
Preheat the oven to 375 degrees
Pour flax seeds into a large mixing bowl, and chia seeds into a separate smaller bowl
In a medium saucepan, bring water to a boil
Pour three cups boiling water into the flax seeds and one cup of boiling water into the chia seeds
After 1 minute pour chia mixture into flax mixture (note: if chia turns into a ball before mixing it into flax pour a little water in to break it up so it mixes in evenly with the flax seeds)
Mix in vanilla and liquid stevia With the chia and flax seeds
Mix throughly with a large wooden spoon every few minutes until most of the water is absorbed
Grease two glass baking pans and spread the mixture out evenly across the top
Sprinkle cocoa nibs and shredded coconut on the top
Bake for an hour, or until the sides of the bar shrink away from the pan 1/4" to 1/2"
Slice and enjoy!
