Boil, bake, and fry your way to these delicious low carb french fries!
Preheat the oven to 400 degrees
Peel Jicama and slice into thin, long rectangles (the shape of french fries)
Fill a pot with water and season with black pepper and sea salt, and bring to a boil
Submerge all jicama pieces in the water and allow to sit for 10-15 minutes (until Jicama is pretty soft and not crunchy)
Drain in a colander and place on a baking sheet evenly spread out
Season evenly across the top with cumin, black pepper, sea salt, and cayenne to taste (Note: more cumin and cayenne will make for spicier fries!) If you want, you can flip the fries over and season on the other side, but we noticed they were delicious only seasoning one side!
Place baking sheet into the oven for 7 minutes
While the fries are baking, take out a pan to fry them in (we used our wok) and heat up 6-8 tablespoons of pork lard
Remove the fries from the oven and place into the heated oil
Fry until golden brown
Serve with your favorite toppings (we used bacon, egg, cheese, and sour cream) and enjoy!
